Ingredients
1/2cucumber
200ghummus
1smallcarrot
Instructions
Cut the cucumber in half lengthways and scoop out the core (it can be saved for adding to smoothies).
Fill the core with hummus, then with a sharp knife slice the cucumber into bite-size pieces. Shred or finely slice the carrot and place a few pieces on to each of the cucumber hummus bites.

Storage: Cover and keep in the fridge for up to two days.
