Cucumber Hummus Bites

Cucumber hummus bites are one of my favourite vegan party foods. They're fresh, delicious and healthy. Plus they're gluten-free and quick to make. There's a lot of reasons to serve these easy vegan snacks at your next party, BBQ or picnic. Recipe from veganrecipebowl.com

Ingredients

  • 1/2 cucumber
  • 200 g hummus
  • 1 small carrot

Instructions

  • Cut the cucumber in half lengthways and scoop out the core (it can be saved for adding to smoothies).
  • Fill the core with hummus, then with a sharp knife slice the cucumber into bite-size pieces. Shred or finely slice the carrot and place a few pieces on to each of the cucumber hummus bites.

Notes

Storage: Cover and keep in the fridge for up to two days.
