Cucumber hummus bites are one of my favourite vegan party foods. They’re fresh, delicious and healthy. Plus they’re gluten-free and quick to make. There’s a lot of reasons to serve these easy vegan snacks at your next party, BBQ or picnic.

I’m asked a lot what do vegans eat at parties? These days there are often one or more vegans at an event. Fortunately, there are loads of creative options based around fresh fruits, vegetables, and also cakes and pastries, so we can easily cover everything from treat foods to gluten-free and low calorie so that nobody misses out.
I’m starting a series of posts to share my favourite vegan party foods. The goal is easy to make, plant-based snacks and appetisers that will be enjoyed by everyone – vegan or not.
One of the things I often say is to make some hummus! Hummus always comes up when searching for vegan party snacks. And for good reason, hummus is delicious and healthy. But there’s a problem, I’ve found many times the standard vegetable sticks and bowl of hummus often ends up sitting there uneaten. It’s just messy and difficult to eat, people like things they can pick up and take away on a plate. So, I decided to make something easier and ended up with these hummus cucumber bites.
Green Tip – You can save the scooped out cucumber core (in the fridge, or longer-term in the freezer) to add to smoothies.
You can buy the hummus to save time, but I love to make my own hummus. It’s pretty simple, and you’ll have plenty to use in various snacks or to save and enjoy later. Hummus can also be adapted by adding additional ingredients, so you can create a variety of different types to serve in different snacks.
Cucumber Hummus Bites
Ingredients
- 1/2 cucumber
- 200 g hummus
- 1 small carrot
Instructions
- Cut the cucumber in half lengthways and scoop out the core (it can be saved for adding to smoothies).
- Fill the core with hummus, then with a sharp knife slice the cucumber into bite-size pieces. Shred or finely slice the carrot and place a few pieces on to each of the cucumber hummus bites.
